2 Cups Basil
2 Cloves Garlic
1/3 Cup Olive Oil
2 Tablespoons Lemon
¼ Cup Parmesan Cheese
Sun Dried Tomatoe
1. Use “Spiralizer” or a peeler to make the zucchini noodles.
2. Add to the food processor or blender the basil. Slowly add the rest of the ingredients, first the olive oil, then the lemon, garlic and the parmesan cheese. Blend it and season with salt and pepper.
3. Boil water as if preparing pasta. Add the zucchini and cook for 3 minutes. Be careful to not let the noodles lose its firmness. Drain.
4. Combine the spaghetti with the pesto. Stir until the spaghetti is well coated. Add the sun dried tomatoes.
5. Serve and enjoy!
