Ingredients (for 4 toasts):
- 1 cup (0.24 l) peeled and cubed Kabocha squash
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 slices of whole grain bread
- 4 tablespoons feta cheese
- 1 tablespoon sesame seeds
- 1 tablespoon chopped fresh herbs (optional)
- Preheat the oven to 180 °C (350 °F).
- Place the Kabocha squash on a baking tray and drizzle with olive oil. Season with salt and pepper to taste. Bake for 20–25 minutes, or until tender and golden.
- Meanwhile, toast the bread slices until crispy.
- Place the bread slices on a baking tray and top each one with a tablespoon of feta cheese.
- Remove the squash from the oven and place it on top of the feta cheese on the toasts.
- Bake for an additional 5–10 minutes, or until the cheese has melted, and the squash is hot.
- Remove the toasts from the oven and sprinkle with sesame seeds and chopped fresh herbs (optional). Serve hot.
